Guest Blog Post: Keeping Healthy While On Vacation

Most people spend months preparing for their vacation. The idea is to look as good as possible for the bathing suits, shorts, and dresses. If you have been watching what you eat, working out, and shedding those excess pounds to look good, you are more than likely ready for your thrilling vacation. However, once you begin your journey, it is important to remember how hard you worked to get in shape and to keep that determination even when you are being tempted with snacks and junk food on your vacation.
Prepare For Temptation Immediately
As soon as you step foot in the airport, you will end up dealing with temptation. There are plenty of fast food restaurants at most of the airports. On the airplane, there are snacks and carbonated beverages offered. To avoid the temptation, make sure you eat before you go to the airport. If you feel full, you will not feel as tempted to grab a bite to eat at any of the fast food joints. You should also carry healthy snacks with you for the flight. The best snacks to bring along with you are nuts, trail mix, dried fruit, and anything you enjoy that is also low in calories.
Choose Your Hotel Carefully
When you are choosing a hotel to book, it is important to choose a hotel that offers accommodations and amenities that are convenient for you. Most hotels have a fitness center with treadmills and other workout equipment. It is good to choose a hotel that has a fitness center so that you can still get a bit of exercise in your daily routine. Even an hour or half an hour a day would help you to burn off calories and keep up with your fitness. If the hotel has a swimming pool, you can also get your exercise by doing a few laps in the water. Stopping at a local grocery store to buy healthy snacks, such as fruits and vegetables, is also a good idea. Most hotels have a fridge in the hotel room where you can keep your food items cold and fresh. Often times it is difficult to tell before hand whether a hotel has the appropriate amenities. I have found a little due diligence to go a long way in this regard. I was searching the internet for a recent vacation and found a great site that listed reviews for Las Vegas hotels ranging from the amenities offered, to the restaurants in the area. This made it easier than ever to ensure I maintained my healthy lifestyle while away.
Choosing the Right Foods
While on vacation, you are most likely going to eat dinner or lunch at a few different restaurants in the area. It does not hurt to eat a restaurant but it is important to know which foods are best for your diet and which foods you should avoid. If there are restaurants with salad bars, you can always have a healthy and tasty salad without all the excess calories. Try to choose baked or grilled options instead of anything that has been fried. There are certain words on a menu that are immediate red flags. Some of those words include loaded, smothered, and fried. If you see those words on the menu, avoid choosing that dish. Some restaurants provide information on the number of calories in each dish, which gives you a better idea of what you should choose too.
With just a little bit of willpower, you can easily stick with your diet and fitness routine even while enjoying your vacation. If you do slip up with eating something that is not necessarily the best for you, you can always spend time working out at the hotel fitness center or swimming in the pool to burn those calories.

Empowerment For Girls + Collaborative Art Project

About a month ago, I was approached by artist Sofia Dabalsa about a project she was putting together called The Goddess Chronicles. I was immediately excited and was totally stoked to participate in such an inspiring and empowering project for girls. I created two pages for the book using watercolor, markers, appliques, photos and of course – crystals and bling! I could tell you all about The Goddess Chronicles, but I’d much rather let Sofia tell you in her own words. Here they are…
The Goddess Chronicles

The Goddess Chronicles was born out of a deep desire to create something collaborative with other women around the world. Since finding my tribe, I have felt the shift within me as an artist and as a woman towards embracing the divine feminine within. My spirit has awakened and I live now to be more receptive, authentic, and to honor my creativity.
The Goddess Chronicles is an intention to hold the highest vision of all women through expressive and artistic creations. There is a change that is stirring in the souls of women around the world more than ever! I would like to document a small piece of this evolution for younger generations of goddesses. My hope is that The Goddess Chronicles will help girls and women alike recognize the profound love within to expand their creativity and cultivate living an authentic and happy life!
The Goddess Chronicles started in the United States but quickly became an international collaboration! Initially there was to be one traveling art journal. I soon realized that logistically it would not be possible. In just two days The Goddess Chronicles reached over 30 participants. The response has been just absolutely AMAZING! This tells me that many people around the world are craving to collaborate and create!
I just simply could not turn away those hearts that deeply resonated with this idea! At final count I am working with 62 participants and 13 traveling journals. Readers will find artwork from participants all over the globe. The Goddess Chronicles spans from coast to coast of the United States, and is in Canada, Colombia, Puerto Rico, United Kingdom, The Netherlands, Australia and Israel! The theme of this traveling art journal is Goddess Chronicles that inspire young and old; girls and women with messages from the heart to DREAM BIG.
Participants have free reign to create their masterpiece. They can use collage, watercolors, pencils, crayons, stickers, stamps, pockets, fold-outs, cut-outs or all of the above! Pages can be done alone or can be done with a partner. Participants have agreed to complete one or two pages within a two-week time frame and mail to the next participant.
When the book is full, it will be mailed back to the point of origination with Sofia. At this point the book will be professionally photographed. I will be making photo books for all who want to own this special piece of art. The energy surrounding this project is intense, I believe that The Goddess Chronicles will sell in volumes! Part of the proceeds of every book sold will go to Girls Inc. in San Antonio, TX a non-profit organization established to empower young girls!
The original Goddess Chronicles traveling book will be donated to empower young girls at Girls Inc. in San Antonio, TX for years to come! My hope is that each time a young girl sits to view The Goddess Chronicles it will inspire them to reach for their dreams!
Short Bio: I am an artist everyday and for me the creative path is following my spirit. I imagine myself walking along a dark forest like Dorothy in the Wizard of Oz; I’m a bit scared but I know I’ve got brains, heart and courage coming along with me. My spirit illuminates the yellow-bricked road of creation and each time I decide to pay close attention to my spirit, I brighten up.

Stinky Vaginas + My Italian Heritage

This is a shout-out to all the Italian’s in the HOUSE!
Have you ever eaten Baccalà? Do you even KNOW what Baccalà is? Well, if you look at Urban Dictionary, it says that Baccalà is a smelly vagina….OOH FAH – YUK … WTF – that thought makes me gag and totally not hungry. It insulting too. I’m in protest of that reference!!! Ever wonder why vaginas the brunt of many negative, false and silly references? I think its because they scare weak men but that’s a whole other blog post!
In reality, Baccalà is salted cod and was once very common in Italy because it allowed those who lived far from the coast to enjoy fish on the days the Church required it … and at other times too because it was tasty and inexpensive.
Serving Baccalà on Christmas Eve is an old Italian tradition. I love tradition and I love my Italian heritage, so I found myself in a quandary… should I attempt this recipe that apparently is likened to a “stinky vagina” or should I skip it?
My caveman Mike really enjoys it when I prepare traditional Italian food since it reminds him of his grandmother (Grandma Rosati) and I love my heritage and I love tradition …
Hmmmmm … what to do …. well, I decided to make the Baccalà! I wasn’t able to make it on Christmas Eve this past year but I did make it the first weekend in January. HEY – better late than never!
Here are my tips to ensure that you have a delicious meal and not a stinky vagina (oops – I mean) mess
! Look for slabs that are at least one inch thick, white with a slight yellow tint and make sure that the pieces don’t appear too dry. Generally, the rule of thumb is to soak the Baccalà in water (in your fridge) for three days BUT I soaked it for five days changing the water every day. If you soak it for five days the finished dish will NOT taste fishy or stink, that’s my secret! My mom told me to soak it in milk which I didn’t try because I find my method works brilliantly. I’m thinking that the next time I prepare this recipe I’m going to add some lemon juice to the soaking water and see how that comes out!
Baccalà tends to be in the markets during the winter months so that’s when we’ll eat it because we eat seasonally in our home. If you food shop you’ve probably walked right by it … its a white, rock solid slab of dried up fish covered in salt and its usually hanging out by the seafood section. I used Carbquick instead of flour in this recipe because it has less carbs and I’ve found that a deep fryer makes preparing a dish like this a snap and the finished fish is less heavy with oil.
If you ask me the photo below of the freshly fried pieces of Baccalà looks extremely appetizing.
Remember folks … NO STINKY VAGINAS ALLOWED!
Ingredients:
8 1/4-pound pieces of boneless Baccalà (salt cod)
olive oil or grapeseed oil ( I used grapeseed oil, it has a higher flashpoint)
3/4 cup Carbquick (low carb flour)
1 teaspoon fresh ground pepper
1 lemon, washed and cut into wedges
Directions:
- Place the Baccalà in a large bowl and pour in enough water to cover by 2 inches. Set aside in a cool place, or in the refrigerator, and soak for 5 days, changing the water daily (I use purified water from my water distiller).
- Remove the fish from the water, rinse and let sit in a bowl to dry off a bit.
- Heat oil in a large fry pan (I use a deep fryer – soooo much easier) until hot but not smoking approximately. 375 degrees F. Note: It is crucial that the oil be hot enough or the Baccalà will be heavy and oily (yuk!).
- Mix the Carbquick (flour) with pepper in a large plate. Cut the Baccalà into 3″ x 4″ sized pieces put in Carbquick mixture, turning to coat each side completely.
- Fry in the hot oil until golden, 3 to 4 minutes on each side, turning to cook all sides (if your deep frying like me – disregard turning pieces).
- Transfer to a large plate lined with white paper towels and set aside for 10 minutes to drain the excess oil.
- Serve with lemon wedges and mangia!

My Interview With Shann Vander Leek

A couple of weeks ago I was interviewed by my friend, colleague and fellow Co-Author Shann Vander Leek, Creatrix of Transformation Goddess for her interview series Divine Feminine Spotlight. I was so excited when Shann approached me for the interview because
- I NEVER tire of speaking about the Goddess or Divine Feminine Energy.
- When Shann and I get together it’s always a good time…a really good time filled with lots of laughing!
Laughter is the best medicine so I try to laugh each and every day. Sadly, some days are just not that fun and most people don’t crack me up… so when I get an opportunity to spend some time with the peeps that tickle my finicky funny bone, I’m all in!
The interview went off perfectly, we had a blast. Shann had asked me to send her some questions for the interview but I asked her to surprise me. Yup, I’m tend to be a maverick by nature… I thought the interview would be more authentic if I wasn’t prepared in my answers. I was stumped a couple of times by Shann’s introspective questions, it took me a couple of minutes to think and process!

Birthdays + Sacred Traditions

Oh yes, it would have been waaay easier to order food from a catering place and eat off of paper and plastic but that would have devalued the sanctity of tradition and the beauty of formality. When I cook a meal for my family, especially for a birthday or holiday, I infuse the food and the day with all my love and devotion.
I don’t know if you noticed too …but there’s a global trend occurring, people are becoming more and more lax. Formality is flying out the window. Sacred Tradition is becoming extinct. I think about why that is often… perhaps its because most women are so busy and wearing so many hats each and every day. Something’s got to give, right? For me, my children’s birthdays are NOT a day I’ll skimp on. For me, it’s not about the price tag; it’s about the effort and the devotion. What about you?

Kayaking And A BIG Lesson On Teamwork

This past weekend we (the three cavemen and I) decided to go on a kayaking adventure. We’ve lived in our home for the past six years and our town has access to a gorgeous river. We’ve never made the time to enjoy the river activities that are available to us… until recently. Over the past summer Mike has taken the boys fishing at the bluff, the boys have gone fishing at the bluff, I’ve gone and sat at the bluff, we’ve gone to Short Beach and Long Beach and watched the sun go down…but never before have we kayaked down the river.
I wouldn’t have predicted that I would find a lesson in teamwork and marriage while kayaking… but being the analytical thinker that I am, I did…and it’s a doozy!
That’s a photo of my man Mike and I before getting in our two person kayak. By the way, I forgot to mention that both Mike and I have never kayaked before in our life…and for Mike that’s a really, really long time. Just kidding honey
The boys, Mike and I got assigned our respective kayaks and we were off to begin our 5 mile paddle down the Nissequogue River! My youngest Nate shot into the lead position paddling his little arms off while Noah hung back and began shouting out commands and informing Mike and I what we were doing wrong…
After 4 or 5 minutes it became painfully obvious that indeed we were doing something wrong because we ended up in the wetland reeds (it hurts when they poke you in the eye) and beaching ourselves in shallow water. One of my life challenges is not knowing my right from my left when I’m under pressure. This has proven to be dangerous to my health in the past when dealing with horses (that’s another blog post story). With that said, Mike keeps snapping “paddle on the right” and I respond by immediately paddling on the left…which sparks him to say sharply at me “I know your dyslexic (I’m not) but that’s not your right!”…which sparks me to yell “stop YELLING at me!” back at him…at the same time Noah is paddling his kayak (like Joe Cool Kayak) right next to us saying “I told you we shouldn’t have tried this”.
If I wasn’t so not in the mood to be stranded in the middle of nowhere in brackish water, I would have jumped out of the kayak and attempted to walk the rest of the way!
If it wasn’t bad enough that Mike was making, what was supposed to be, a fun trip into some sort of precision Olympic Sport...I had Noah… the proverbial “Peanut Gallery” cracking comments on the side lines.
Two negativity mongers that’s what they are!
My little guy Nate was waaaay ahead of us at this point. Lot’s of other folks were kayaking down the river too. I wonder what fun they must of had watching and listening to Mike and I bicker? Glad to be of service…that’s what I always say!
Mike likes to bicker. He says it’s debating and I say it’s bickering AND it’s fucking annoying. Everything in life cannot be a debate! I need some easy-breezy times where he just absorbs the info I’m saying and allows it to sink in before shooting back a retort. But I digress…
Mike asked me to “rest my arms”
and not paddle so I began to look at all of the other people kayaking around us. Most of them were whizzing past us…
Then as luck would have it, a couple on a double person kayak came up along side us and I watched them. The man was in the back and the woman was in front, the same seating positions as Mike and I. The next thing I noticed not only changed our kayak game but gave me deep insight into relationship struggle. The man was waiting for the woman to put the paddle in the water and at the same time he stroked the oar in the same direction as her…TEAMWORK!
“Ah ha!” I thought to myself…I can’t see what Mike’s doing back there…I don’t have eyes behind my head. I wondered to myself (already knowing the answer)…is Mike paddling with me or against me?
I asked him…”Mike, are you waiting for me to paddle and then paddle with me, or are you paddling on your own agenda?” He responded “No, I’m just paddling on one side than on the other.” I said “Mike, you can see me… be but I can’t see you…please look at that couple scooting down the river…he’s waiting for her and paddling along WITH her not AGAINST her.”
No response from Mike. That usually indicates that he got busted …
Once I made that discovery, Mike began paddling with me and we began to really move down the river. That’s us, you can see I’m smiling and so is Mike! There’s Noah, aka the Negativity Monger #1, chilling out next us in his kayak.
What I never fully realized about Mike is that he’s really not a team player by nature. It just doesn’t come naturally to him. Perhaps he was never taught the concept of teamwork growing up, I’m not really sure. That’s where most of the strife in our relationship comes from. He has his own agenda a lot. It doesn’t make for smooth sailing in a relationship or smooth kayaking either! Pun intended by the way…
The great thing about my man Mike is that once something is brought to his attention, he works hard to improve it. Once we learned how to paddle our two person kayak effectively, we began to have some fun.
The river was picturesque and beautiful. It felt great to be out in nature, connecting with the divine…it felt great to try something new and be with my boys…it felt great to laugh with my man. Day to day life can be a real drag, it’s so important to do things or try new things together as a couple and as a family. Before I knew it we had caught up with Nate. Our new found paddling strategy was working perfectly! Only a couple more oopsies into the reeds but that’s not bad for kayaking newbies attempting a 5 mile trip!
There’s Nate and we’re closing in on him. Almost finished with the trip…
WE DID IT! Mission complete, we all successfully completed the 5 mile kayak trip down the Nissequouge River! Awesome!
What I learned on this adventure was the importance of teamwork in a relationship. If you have your own agenda and paddle against the flow of your relationship goals, you will inevitably move in circles and there will be strife. Strife and drama is avoidable with great communication, respect AND working together in unison for a common goal. Mike and I being “stuck” in a two person kayak forced him to work with me. If he didn’t we would have spent a lot more time and effort trying to achieve a successful finish.
All and all it was a wonderful day and I wouldn’t change a thing about it…even all of the strife. Mike and I got struck by a cosmic two by four that I believe will cement our “TEAMWORK” mantra, and the boys had a great time.
Mike made me laugh when I overheard him telling some people that I was looking in the kayak for a Martini Bar instead of paddling.
He was right!

THIS Goddess Has Some Grit!

So, I had an interesting week… I have wondered from time to time throughout my life how I would react when my time came to leave this physical plane and pass over. My perfect scenario would go something like this:
I’m 110 years old, still sassy and totally with it. I’m wearing dark burgundy lipstick (my signature look) and all of my children, grandchildren and great grandchildren are sitting around me. We talk, reminisce and laugh. We eat really delicious food, I eat ALOT of bread smeared with butter and I drink some fabulous red wine. Once it gets late, they all leave and go home, each of them telling me how awesome I am and how much they love me. I fall off into a beautiful, peaceful slumber and pass over.
That’s my number one choice on how to go and I am totally planning on my life unfolding that way, but … what if that’s not in my cards? How would I deal with a different scenario?
Would I freak out? Would I cry and scream? I believe you never really know how you’re gonna react until your faced with the potential of dying square in the eye. It springs to mind a bad ass quote by Eleanor Roosevelt:
Holy Shit how true is that? I just LOVE that quote. It is so very, very true. How do I know? Well, I’ll tell you but you have to read on…
I was returning home from a business retreat in California two nights ago. I booked the red eye back home to New York. My plane was delayed an hour, they estimated it to leave Cali at 10 pm instead of 9 pm (my first annoyance of the evening – but hey! … it was no biggie in the scheme of things).
Once I boarded the plane I sat down in my seat – 16F, a window seat, then a few seconds later a 30 something hipster dude sat down in the isle seat leaving an empty seat between us. A flight attendant asked over the loud speaker if everyone could please find their seat and then SIT in it since we were already behind schedule and we needed to try and make up some time. Then she informed us that it was a “full fight”. The hipster and I exchanged glances and frowned. Yuk …a full flight… what were the chances that the middle seat would remain vacant? There is nothing more uncomfortable than a really long flight jammed in a small seat, sitting elbow to elbow.
The passengers continued to load onto the plane and took their assigned seats. With each person that walked by us (instead of sitting their ass down between us) we exchanged a celebratory “whoo hoo”. As time passed fewer and fewer passengers walked by. Things were looking good!
Finally, the last passenger was on board and getting themself settled into their seat. We lucked out, no person between us, we could stretch out a little and enjoy a more comfy flight!
It was approximately 10pm and we were ready for take off. I quickly swallowed a sleeping aide (yes, its true … I do rely on sleeping aides on long flights) and took my earplugs out of my carry on bag. I was looking forward to 6 hours of sleep. After initial take-off the crew dimmed the lights in the cabin and set the mood for shut eye. Eventually, I fell off into a slumber.
I’m not sure how long I was sleeping, I think 2 hours or so when the plane banked deeply to the left and started a rapid decent. I sprung up and looked at the hipster. He had flung his sleep mask off his head and said to me “this is NOT good, they are banking to the left and we are supposed to be flying straight and east!” Then the lights in the cabin flicked on. We both started squinting due to the intense change in light. The next thing I remember is hearing a voice over the loud speaker. The Captain asked us to remain calm and that we needed to make an emergency landing in Salt Lake City, Utah.
WHAT???
SHIT!!!!
All the while the plane was banking left and descending … rapidly. People started to panic. The flight attendants were attempting to calm the hysterical passengers.
In that moment, I went numb.
Was my life over? Are we crashing?
The Captain came back on and informed us that emergency workers would be boarding when we landed in Utah.
Holy Crap, is there a terrorist on board?
What the f*ck is happening?
I had absolutely no clue … none of us passengers did. All that I knew for sure was I could be dying and my life could be ending.
I never panicked, really! Not even for a second while the trauma was occurring. I hunkered down emotionally. I didn’t think about anyone … not my three children, or my husband, or anyone else for that matter.
I was completely at peace.
My life did not flash before me and there was absolutely no regret bubbling up.
Believe it or not, I didn’t feel one bit scared while it was happening (that set in later).
Instead, I felt gratitude for a life well lived. Sure, I really wanted more time, but in the nano second it takes to think things through and size up a situation – I was feeling at peace.
The plane continued to descend at a rapid pace when the Captain announced that the crew should get seated and buckle in.
“Oh, please don’t let us suffer and die in flames” was all I could think about.
I looked at the hipster and he looked back at me, we smiled at each other. I thought to myself, he had a nice smile, really big and toothy. Then my warm and fuzzy thoughts immediately turned into a rant “Imagine this bullshit, not being able to look at the people I love the most in the world at the end of my life… what a effing shame”.
I’m pretty certain the hipster felt the same way as I. In that moment we had no choice but to find comfort in each others presence, and I think we did.
We both sat there very calm and quiet…
The landing was super rough, we bounced up and down as we hit the runway. The Captain squeezed on the brakes, they made a horrible sound as they forced the plane to make an abrupt stop.
In a matter of minutes there were police officers on board, they escorted this skanky, tattoo ridden, dirty looking, biker dude – wanna be off the plane as he exclaimed “I’m sorry” over and over.
It turned out he was a drug addict or something and not a terrorist. He left the plane relatively peacefully with his haggard woman and scrappy Pomeranian in tow.
I turned on my phone and called my hubby, then I began to cry…
My man stayed on the phone with me until we were told by the Captain to power down our phones and prepare for take-off.
The next flight from Utah to New York was completely uneventful… Thank Goddess!
To sum up – What I have always known about myself is that when shit is going down, I am fully present and C-A-L-M.
I consider myself to be a Warrior Woman and this experience firmly cements the claim.
All I can say is “bring it on” because this Goddess has got some grit!

Window Cleaner Recipe – All Natural Baby!
Ingredients:
1 cup white vinegar
1 cup distilled water
1 cup vodka
20 drops rose geranium pure essential oil
Directions:
- Mix all ingredients in a spray bottle.
- Spray your windows or mirrors and wipe away grime and dust with paper towels or black and white newspapers.
